This is a technique based class where we will explore a variety of basic yet unique ways to prepare SEAFOOD.
Learn how to select/determine the freshness of SEAFOOD, how to store SEAFOOD, how to prepare SEAFOOD for cooking, the different cooking processes/techniques, acceptable recipe adaptions or substitutes, and how to avoid that "fishy smell" in our kitchens.
In this class you will learn how to cook the following menu which will cover the foundations of SEAFOOD cookery:
Grilled Salmon with Pesto and Balsamic Reduction
Roasted Halibut and Vegetables en Papillote
and for Dessert you will learn how to make:
Pound Cake with Crème Chantilly and Orange Suprêmes
Once you take this basic technique class, you will be able fearlessly take on SEAFOOD.
