Pasta 201 ravioliNo matter how good the dried pasta available in your local shop is, it absolutely does not match the flavor of fresh, homemade pasta.  Making fresh pasta might sound entirely too complicated, but with the help of modern appliances you'll discover that handmade pasta is so easy!

In Pasta 101, you learned the simple techniques to make basic flat pasta (Spaghetti and Fazzoletti). (Taking Pasta 101 is not a pre-requisite to attend Pasta and Beyond.)  
In Pasta and Beyond, you will learn to make more complex pasta that is stuffed and shaped (Agnolotti, and Tortellini). You also get to learn some advanced techniques in making Sauces (Brown Butter and Pesto).

In this hands-on class, you will learn how to make: 

Butternut Squash Agnolotti with Walnuts and a Brown Butter Sauce
Spinach and Ricotta Tortellini with a Pesto Sauce

and to satisfy your sweet side we will finish with:
Panna Cotta with nocino caramel sauce

pasta 201 tortellini pestoIn our Pasta classes, you will learn how easy it is to make all different kinds of delicious fresh pasta. Think about it -- If you have taken both Pasta 101 and Pasta and Beyond, you will have learned to make 4 different fresh pasta dishes.
