To make a great soup, you must first start with a flavorful stock. The class begins by making a quick and easy Vegetable Stock as a base to build many delicious soups.
Soups generally fall into three categories. Thick (puréed), Clear (clear broth-based soups) and Specialty (Regional). You will learn how to cook an example of each:

Tuscan White Bean and Kale Soup (Clear)
Charred Tomato and Basil Soup (Thick)
