The majestic mountains, the fertile valleys, and the incredible rivers that flow through them inspire a cuisine famous for being hearty and robust (need to keep those busy cowboys, hikers, skiers and fishers persons satisfied).
Chefs from these regions turn to local farms and ranches for the freshest, seasonal products and create dishes where trout, lamb, bison, and game meats are paired with farm fresh vegetables and fruits.
